Temperate climate with favourable sunshine, but with strong variations due to conflicts between oceanic, continental and Mediterranean influences.
The grapes are harvested at night when they are fully ripe to get the best expression of the grape variety. The alcoholic fermentation is slow and takes place in stainless steel tanks with temperature control. The wine is aged on fine lees for about 6 months.
