The vines are planted next to the lagoons of Bages and Sigean, on calcareous clay type of ground. This soil is stroked by mild winds from the sea, which moderate the sunlight.
The grenache is stalked and placed in tanks of fermentation. Depending on the intensity of the color, a more or less important “bleeding” is carried out. Since the skins of the Syrah grapes are containing many colorant matters, the pressing is done as soon as arrived in the cellar. 24 hours later, washing and vinification at low temperature are performed.
