Soils
Marly limestone and marl from the era of Middle and Upper Jurassic. Brown soil mixed with pebbles and hard limestone gravel.
Climate
Hot summers and dry autumns are factors of a good maturation of grains. They promote the enrichment of sugar and coloring matter of grapes.
Winemaking
After a manual harvest, it makes sorting and selection of the best grapes. Graps that are immature or are damaged are systematically separated and destroyed. Thus, only the best grapes are put in vats for winemaking, for a period of 12 to 15 days in controlled temperature with 1-2 pegging per day. When the wine is finished, it is put into vats to rest a few days.
